Open the Field Merge dialog box and drag the desired merge to the subject line. Once it's there, you can't really move it, but you can edit the text around it. Another option is to paste the actual code into your subject line. Then save and exit the email. When you open it up again, you'll see the familiar yellow merge indicator.
